Texas Is Better

This guy clearly knows his stuff.  Comparing Texas BBQ to Memphis... no Comparison.  Texas wins hands-down.

Pork... I don't dig on swine.
Vinegar... fine for the sliced pickles, (a.k.a. vegetable if you're a Texan at heart) but keep it out of my sauce.

like you I am from NC
And I grew up on eastern North Carolina BBQ and it is the best by far, those Texans can stick their hamburger meat on a grill and call it BBQ but it does not come close.

Well...
Mr. Moderate... I am not FROM North Cackalacky.  I am FROM Texas... and I think you're confusing North-East Yankee "barbecuing" (a.k.a. more properly... "grilling") with Texas "Barbecue"... then noun differing GREATLY from the verb.

Texas Barbecue is all about the beef and all about the brisket.  Hamburgers are for tailgating before the Longhorn games.

Drowning...
Shredding... and then drowning perfectly good prime pork in vinegar makes no sense.  Memphis BBQ... the bastard child of east-coast and Texas BBQs.

As we have seen on this site there are some differing opinions on issues but you have lived here and been through the BBQ arguments, they can be as brutal as the political ones.

'BW3' in the Olde City, is a starter.  Then pretty much anyplace on Cumberland ave near the University is a contender. Ask your inlaws about anyplace else farther up Kingston Pike.

Don't forget to try a 'Wheat Crust Pizza' from Stefano's, on Cumberland.

And NCDEM don't get mad that your ENTIRE state can't come up with a pigskin squad to beat my beloved Tennessee Volunteers.

I live in Hickory my inlaws live in Lebbonon or however you spell it, NC Dem I will pass on my opinion on visiting them as my opinion could be incriminating.

Bruticus NC is a basketball state as one can attest to Duke(1991,1192,2001) UNC(1957,1982,1993,2005) and NC State's(1974,1983) National Championships.

Yes, Moderate, NC doesn't count for football...

Texas picks off any decent talent from NC (Mac Brown)...  

Though we had to beg to get into the big bowl this year, I think we did just fine.  Plus, everybody's undefeated now, so we'll see what happens.  I'd place any future bets on the REAL UT, if I were you.

NC has too many (5) Division I-A schools for any to be any good. Tennessee has three and two of them suck, so UT gets who they want and Vandy and Memphis get the scraps.

The SEC also has lower academic standards than the ACC. ACC schools can only accept four partial qualifiers (two men, two women) per year. SEC schools don't have that restriction. I don't know about NC schools, but I know Clemson has had to pass on some good talent because they couldn't get in.

Buffalo Wings
MUST be, first and foremost... crispy...  I've never had Knoxville Buffalo wing, but if they're crispy, then that would be a start.  However, given Knoxville's fondness for drenching their dry-ass pork in vinegar... I'm skeptical of whatever crap they might call "sauce" that would be placed on those wings.

I would think that Knoxville bbq would be more along the lines of western NC bbq which is the tomato based souce but I can not speak for Knoxville.

I've only had 1 Knoxville barbecue experience, and it was Mustard/vinegar... but if, as a whole, they're more tomato(y), then I might have more respect for them... (except for the fact that it's pork).

I do not know about Knoxville BBQ the Mustard vineger would be something I would think aroung GA or Alabama but I guess it could be in the Knoxville area.  Eastern NC is not a mustard vinegar but a red pepper vinegar while Western NC is a tomato based sauce.  Because of Knoxville proximity to western NC I would have thought it to be like Western NC but it is possible it follows a different line.  And to me if it is not pork it is not bbq, but I hear you folks out west think different.

Mustard based sauce comes from the midlands of South Carolina. You haven't had bbq until you've had slow smoked pork with that sweet 'n tangy mustard sauce on it. Good stuff.

I have seen it in eastern Tennessee as well, near the Smokies, so it may have a following there as well.

Good vinegar based sauce is excellent, bad vinegar based sauce is a waste of time. Ketchup based sauce is a poor excuse for bbq sauce. Sweet ketchup based sauce is a sign that someone doesn't know much about bbq.

Don't get me wrong, Texas folks, smoked beef brisket is good, but real BBQ is PORK.

Most of Knoxville's  wings are fried then dipped  (or baked) in sauce, thank you very much. Your average wing spot has as many flavors as hooters..
